Domaine Takahiko is located in the Nobori area in Yoichi-cho, Hokkaido, 60m above sea level on a hill whose base rock is well-drained andesite. The area is relatively warm thanks to the warm seawater and recieves little rain, which is a blessing. Since dry wind blows down from Mt.Yotei located inland, the Pinot Noir grapevines are protected from disease and cared for through organic farming. In the fermentation process, 100% whole grape clusters (without destemming) are used to promote natural fermentation without adding yeast or sulfurous acid. The basic idea is to allow nature to do her work and watch over the process. Domaine Takahiko winery specializes in Pinot Noir, producing wine through its senses instead of following a textbook (manual).

This winery was established in 2007, and produces wine from grapes grown on the grounds since 1998, creating a local integrated production system. Major cultivated grape varieties include Pinot Noir, Merlot, Reichensteiner, Schönburger, Kerner and Kita no Yume (a wild vine/Pinot Noir hybrid). Sparkling wine is also produced by secondary fermentation in bottles using apples from Aomori Prefecture.
In 2016, a second factory was built within the Aomori Winery Hotel, and produces wine from Steuben grapes and Aomori apples.
Wines from this winery have won many awards, such as Ryo Classic being the first to receive the gold prize for Pinot Noir at the Japan Wine Competition.

Established by the Honda family in 2006, Fermier is a small winery with an annual production of 15,000 bottles. Fermier is located in Niigata prefecture, approx. 2 hours northwest of Tokyo by bullet train.
Fermier is in a new winery region named the ”Niigata Winecoast” near the Sea of Japan. Soil in the region is composed of sand that has been carried towards the sea by the large Shinano River and deposited along the coastline. The sandy soil is well drained and poor in nutrients, perfect for growing grapes.
The climate in Niigata is oceanic (not continental) with high rainfall and humidity.
Fermier mainly cultivates Albarino (which is well adapted to heavy rainfall and humidity) and Cabernet Franc, a variety of Bordeaux (also suitable for sandy soil).

The Iwanohara Vineyard is located in the Echigo Kubiki Plain, where the Myoko mountain range reaches the Sea of Japan. “The right bank of the Narai River is located at 43 degrees north latitude and 700 m above sea level in a cool and dry climate with little rain. The area is surrounded by the Northern Alps and sandwiched between Matsumoto-daira and the Kiso Valley, called Kikyogahara. Goichi Wine is produced in this area at its winery on a 7.5-hectare vineyard in Kikyogahara.
In 1911 (44th year of the Meiji period) Goichi Hayashi started growing fruit trees at the Hayashi winery in Kikyogahara and began producing wine since 1919 (8th year of the Taisho period).
The winery first introduced Merlot in Nagano approx. 50 years ago and today has a high status among Japanese wines. Recently, the winery began producing Kikyogahara Merlot, a top-grade domestic wine.”

In 1877, Tatsunori Tsuchiya, founder of Maruki Winery, traveled to France to learn winemaking techniques. After returning to Japan, he established "Maruki Winery" in 1891, now the oldest existing winery in Japan.
Since Koji Kiyokawa, the current president took office in 2013, improvements to truly become a sixth sector in industry have been carried out. Maruki initiated natural farming grape cultivation with sheep grazing in the field.
